Cleanup
Something we all hate, but that needs to be done after cooking. Cleaning up after cooking on Steelmade’s flat tops is a breeze. The steps I follow are below and take no longer than 3 minutes.
Scrape: While the burners are off but the steel is warm, use a metal bench scraper to push all large food particles and grease into the drainage holes/drip tray.
Deglaze with Water: Squirt a small amount of hot water onto the surface. The water will flash-boil and create steam, which lifts stubborn, burnt-on bits.
Tip: Use a skewer to clear any debris stuck in the drainage holes.
Wipe: Use a folded paper towel or a lint-free rag held with a spatula (or a heat-resistant glove) to wipe the surface clean.
Dry & Oil: Ensure the surface is bone-dry (you can turn the burners back on low for a minute to evaporate moisture). While still warm, apply a very thin coat of Flat Top Oil or a high-smoke point vegetable oil. Buff it in with a paper towel until the steel looks matte, not greasy.
These flat tops are heavy - being made with solid steel (super-thick 3/16" mild steel) - they’ll give you a brief workout when transporting from storage to cooktop. But it’s so worth it. The flat tops also boast a Natural Non-Stick Surface. With each use, your Steelmade builds a "seasoned" patina—a natural, non-stick black finish created by baking oil directly into the metal that only improves and becomes more durable over time.
